Bitter Root
A pale root with a fibrous, pulpy texture and incredibly astringent flavour. It adds complexity to cooked dishes when simmered for a long time. The young stems have a pleasant spiciness served raw and are a favorite of Merini, but the root on its own it has a powerful bitterness that few ever acquire a taste for.
